Guatemalan by birth, visionary by calling — Chef Jorge Peralta has emerged as one of his country’s brightest new voices in cuisine. He trained across Latin America, absorbing techniques rooted in Peru, Mexico, and Spain, and then returned to Guatemala with a mission: to showcase local ingredients through daring, contemporary expressions.
At Casa Palopó, Jorge leads with heart and discipline. His menus traverse the 12 villages around Lake Atitlán, drawing inspiration from their produce, traditions, and flavors. But he doesn’t stop there: he reinterprets in fire, in texture, and in form, guided by both intuition and craftsmanship. His cooking is as much a cultural dialogue as it is a gastronomic one.
